Invertase for preparation of bee fondant


A mixture that is suitable for 100% sugar inversion of 200 kg of sugar syrup 65-75% w/w (e.g. 750 kg of sugar in 250 kg of water) for production of ~ 800 kg bee fondant (sugar paste).

The products, apart from invertase enzyme, contain the following food-grade ingredients:

  • acidity regulators: lemon powder, citric acid, tartaric acid and malic acid.
  • texture regulators: glucose, maltose, various sugars.

Recipe for 100 kg syrup at temperature 40-50ºC (12 hours):

 

Step 1: In a tank mix following ingredients

 

Water: 30 kg (0,03 m3 Χ 4 € / m3)0,1 €

Designed for professionals

Invertobee products are versatile enough to make either sugar syrup or paste easily. They can be used from temperatures 20ºC to 60ºC, depending on the product you choose. One of our most popular products is the Invertobee 73-Z, which is used for making nutritious fondant (aka sugar paste). In 12-24 hours, you can have a syrup of 65% - 75% concentration that has 100% sugar inversion. That is a perfect raw material for replacing honey during the paste production. The sugar bee fondant has soft texture like a dough, it is not thrown away, it is not melting in the hive and has excellent assimilation. The final product has no HMF (below detection limits) which is implicated in bee mortality.
