Why Make Sugar Paste with Invertase?

Enzyme-inverted sugar paste outperforms untreated paste in three measurable ways. First, inverted sugar — a blend of glucose and fructose — requires less metabolic energy from bees, so colonies consume less feed for the same nutritional benefit. Second, enzyme-treated paste stays soft until fully consumed, unlike untreated paste which hardens over time and gets abandoned by the colony. Third, because the paste remains soft, bees don't discard pieces outside the hive, eliminating a common and costly source of waste.

Enzymatic inversion also removes the risk of HMF formation, since the process requires no acid and no excessive heat.

How It Works: A Simple Recipe

Using Invertobee 73-Z, the process is straightforward. Mix 70 kg of sugar with 30 kg of water and heat gently to dissolve. Add 150 g of Invertobee 73-Z and allow inversion to take place — roughly 12 hours at 30–50 °C, or around 24 hours at 17–20 °C. Once the syrup base is ready, blend it with powdered sugar in a kneader to produce the finished paste.

From 100 kg of syrup base you can expect approximately 400 kg of finished sugar paste, at an enzyme cost of roughly €0.075 per kilogram.
